School Lunch Found Guilty!

Salad for lunch? NOT GUILTY!

FoodTeacherAmy says: One thing that may be used to excuse the lunches the DOE delivers to TYWLS of Astoria is the fact that we are currently without a kitchen. I think this is pretty weak, as there are plenty of ways to make good food that doesn’t require an oven or a stove. Take, for example, the salad above. This is my lunch today. It has five ingredients, required very little prep work, and took me less than three minutes to put together. In the entire year and a half I’ve been teaching at TYWLS of Astoria, I have not once seen a piece of lettuce enter the cafeteria. Why??? Salad is so easy! And healthy! And has an infinite number of possibilities! For those of you playing along at home during this break from school, give this lunch a try.

You need:
1. lettuce of some sort (I used spinach)
2. shredded carrots
3. an apple cut into bite-size chunks
4. raisins
5. balsamic vinaigrette dressing.

Mix all ingredients together, insert fork and enjoy. Crunchy and delicious!
